~ About the Owners~
Elizabeth is a native Northamptonite, born and raised. Although she went off to study chemistry, she ended up a graduate student at Cornell studying hospitality management. She moved to New York City to work at the Waldorf=Astoria, married a chef and now is the proud owner of a little restaurant in her home town...Bistro Les Gras.
~ About our Ingredients~
Quality ingredients are very important to us here at Bistro Les Gras. We are dedicated to using the freshest ingredients around. We have been fortunate enough to meet some wonderful farmers around New England who are commited to growing beautiful produce and raising delicious meats both naturally and organically. Since our menu changes monthly, we are able to take full advantage of what's being harvested so we are sure that the food on your plate is the freshest available.
Here at Bistro Les Gras, wine is considered an ingredient that is just as important to a meal as the produce. We take pride in making sure our wine list is wonderfully priced for the quality, that the wines are drinking lovely now, and that the list is diverse and exciting. We enjoy our wines and hope to share that with you.

Daniel grew up in Minnesota and eventually moved to Taos, New Mexico where he met Beth. He has been working in restaurants since he was 15. After years working in the front-of-house he decided it was time to open his own restaurant, but first he would need to learn the kitchen's side of the business. He moved to Manhattan to go to school and to work in some of the finest restaurants in the world. He moved to Oregon and became an Executive Chef before his wife talked him in to moving to Northampton and opening a restaurant.
